Baked Dijon Mustard Mayo Salmon

This salmon recipe is so simple to make, a small amount of ingredients and ready in less than 30 mins, if you don’t try it, you are missing out.

I love salmon, but it can be hard to source wild caught which I prefer, most tends to be farm raised and expensive too. But recently when at Costco, they had some reasonably priced Wild Sockeye Salmon Fillets, and with salmon being one of my favourite fishes, it of course ended up in my cart.

Can I use Frozen Salmon?

Most salmon here is previously frozen, generally because I don't live anywhere near the sea. So frozen salmon should be fine to use in this recipe. Just make sure you pick good quality frozen salmon.

When using frozen salmon you can generally cook from frozen or defrost overnight in the fridge. I prefer to defrost overnight in the fridge.

Can I use just regular mustard?

While regular mustard will work in this recipe, you won't get the same appearance and the pop of seeds in whole grain mustard really adds a much nicer flavour.

Some regular mustards may add too strong a flavour to, so I recommend sourcing whole grain if you don't have any. Maille is a good brand. But I also use Trader Joes brand.

Finishing Salmon under the broil or Grill

As well as baking the salmon in the oven. I also like to finish it off under the broil (grill) for a minute or so, it just helps give a nice golden colour to the mayo and mustard topping.

It's of course totally optional, you can enjoy it just as it is from the oven, as it won't really make any difference to flavour. It just gives a nicer appearance.

Sides for Mustard Salmon

This Mustard salmon is great with a variety of different sides. You can simple just go for some vegetables if you are trying to stick to a low calories meal.

Sauteed Spinach and Sauted Spiralized Vegetables is one of my favourite choices.

But if you want some more traditional sides. Then I love it with either

  • Garlic and Herb Roasted Potatoes
  • Crispy Golden Potatoes
  • Crushed Roast Potatoes
  • Roasted Paprika Butternut Squash

and then for some vegetables I love roasted zucchini (courgette). I just spray with olive oil cooking oil spray, season with salt and black pepper and roast at 425f for about 15 until softened and lightly caramelized. You can cook for less if you prefer it with more of a bite.

FAQs

Should you bake salmon covered or uncovered? ›

Baked salmon is best when cooked at 425°F in the oven.

Even thicker fillets don't take long. We recommend baking the salmon uncovered. Simply rub the fillets with a little oil, sprinkle them with salt and pepper, then place them in the roasting pan skin-side down before popping them in the oven.

Is it better to bake salmon at high or low temperature? ›

What is the best temperature to bake salmon? 400°F (205°C) is ideal as it allows the fish to gain colour and the skin to become crispy. If you prefer a milder method, you can bake it at 350°F (175°C) for 20-25 minutes or until done. The salmon baked at 425°F (215°C) produces tender, creamy fillets that cook quickly.

How long to keep salmon in oven? ›

Preheat the oven to 450 degrees F. Season salmon with salt and pepper. Place salmon, skin side down, on a non-stick baking sheet or in a non-stick pan with an oven-proof handle. Bake until salmon is cooked through, about 12 to 15 minutes.

Do you need to flip salmon in the oven? ›

So, you want skin that is super crisp and flavorful, just as you would want with chicken. Starting your salmon skin-side down, and cooking it until it is well rendered, lightly browned, and crisp, and then turning the salmon to finish the cooking, will make for a terrific dining experience.

Is salmon better in foil or no foil? ›

I like to use a foil packet to keep the cooking foolproof. The foil locks in moisture and ensures that your beautiful piece of salmon turns out flakey, moist, and tender every single time. You don't need to have ever cooked a piece of fish in your life to make this recipe with success. Foil acts as a flavor incubator.

Is it better to pan fry or oven bake salmon? ›

For smaller, crispy, skin-on Salmon; a crispy pan sear is recommended. For bigger fillets, and succulent, skin-off King Salmon; the best method would be cooking in an oven.

Should you sear salmon before baking? ›

Searing and Roasting

Roasting salmon fillets in the oven gives you beautiful, succulent fish that doesn't require constant attention. This method, which we recommend if you're cooking four or fewer fillets, has you sear the fish in a pan on the stovetop first, which crisps the skin delectably.

How does Gordon Ramsay bake salmon? ›

Fold the edges of the foil tightly together over the salmon to seal, leaving some space in the parcel for steam to surround and cook the fish. Put the salmon parcel in the roasting tin and cook in the centre of the oven for 25 - 30 minutes, depending on the thickness of the salmon.

Do you bake salmon face up or down? ›

Always bake salmon with the skin side down as this will help protect the fillet from the heat of the pan and it will help the salmon retain its juices and cook evenly. When it's time to serve the salmon, the skin will come off really easily as you slide a spatula between the fillet and the skin.

How do you know when salmon is baked enough? ›

Firmness: Cooked salmon should be firm but still moist. When you press down gently on the flesh with a fork or your finger, it should feel slightly resistant but still give way easily. If the salmon is still hard or resists your fork, it needs more time to cook. If it is mushy or falls apart, it may be overcooked.

Should salmon be at room temp before baking? ›

It is a good idea to let salmon sit out for 15 to 20 minutes before cooking so that it can warm to room temperature. Do not let it sit out for too long. You want it to reach room temperature right before cooking. If it is at room temperature for too long it can be a food safety risk.

What is the tastiest way to cook salmon? ›

Wrap your salmon in a parchment packet with aromatics, citrus, veggies, and a drizzle of olive oil. The steam trapped in the packet will infuse the fish with flavor and cook it gently, making it tender and juicy. Bonus: The parchment packets only take about 15 minutes at 425°F and the cleanup is minimal.

What to season salmon with? ›

Chefs and home cooks have a few different methods for seasoning salmon before cooking. These are some of the most popular methods. Our favorite spices to use with this type of fish are paprika, chile/chili powder, garlic powder/salt, cumin, onion, and ginger.

How do you keep salmon from drying out in the oven? ›

Use a “barrier”: This tip will come in handy when you're baking fillets. Olive oil, butter, or even a sauce can serve as a protective barrier between the salmon and the heat, allowing it to cook without losing too much moisture. Herbs, vegetables, and lemon slices can also be used to to fillets as they cook.

Is it better to bake fish covered or uncovered? ›

Do you bake fish covered or uncovered? Breaded and coated fish usually is cooked without being covered, but fillets and whole fish are covered for tender results.

What temperature should salmon be cooked at? ›

Use a food thermometer: The most accurate way to determine if salmon is cooked to the correct temperature is to use a food thermometer. Insert the thermometer into the thickest part of the fish and make sure it reads at least 145°F (63°C). Watch the color: As salmon cooks, its color changes from translucent to opaque.
